In collaboration with the renowned Canadian master blacksmith Murray Carter, who himself spent 18 years learning the craft of blacksmithing in one of the most prestigious Japanese forges, Spyderco conceived the two kitchen knife series ITAMAE and WAKIITA, both released under the brand MURRAY CARTER COLLECTION BY SPYDERCO. Literally translated, Itamae means "in front of the cutting board," a prestigious title reserved for highly skilled sushi chefs. The Itamae series thus represents the premium segment of the Murray Carter Collection. The blades are elaborately laminated, so they have a cutting core of Aogami Super Blue Steel, which is surrounded by two layers of SUS410 Stainless Steel. This process protects the hard but rust-prone Super Blue Steel cutting core from corrosion, so that the advantages of the different materials can be used. In classic style, the knives of the Itamae series present traditional "wa-style" (octagonal) handles, which are made of a G-10 composite in a unique root wood look. Gyutou - the Gyutou is a large chef's knife which, unlike the Santoku, is larger and heavier in construction.
